Maple pecan banana bread recipe

When it comes to bananas, I’m quite particular. They need to be ever so slightly green, but not under ripe. If it gets to the black spot stage then forget it. Therefore, whenever I buy bananas, I buy them with the knowledge that probably half of them won’t get eaten. And because I hate to see food go to waste, my hand will be forced to make them into a yummy cake. Oh how very unfortunate! I’ll have to dig out my delicious banana bread recipe again.

Is it just me or are bananas, just that little bit better in a cake?

I’ve tried lots of different variations of this banana bread recipe and I think this might just be my fave. Although chocolate chip is a very close second. The other thing I love about this recipe is that it’s really quick and simple, making it perfect for baking with kids. My son loves mashing the bananas in particular!

So, let’s get on with the recipe shall we.

Maple pecan banana bread recipe

Ingredients

  • 140g butter
  • 140g golden caster sugar
  • 2 eggs
  • 1 tsp vanilla extract
  • 140g self-raising flour
  • 1 tsp baking powder
  • 2 over ripe bananas mashed
  • 100ml maple syrup
  • 100g chopped pecans

Method

1# Line a loaf tin with baking parchment or foil and heat the oven to 180 degrees.

2# Add the butter and sugar into a bowl and mix together until thoroughly combined.

3# Beat the eggs together with the vanilla extract and then gradually pour into the mixture along with the flour and baking powder.

4# When the mixture is smooth and springy, add the mashed banana, chopped pecans and maple syrup. Stir together.

5# Tip the mixture into the loaf tin you have prepared and bake in the oven for around 45 minutes. You can easily tell if the banana bread is cooked by inserting a knife, if it comes out clean it’s cooked.

6# Leave to cool on a baking rack, then slice and enjoy with a nice cup of tea.

Or wine, wine goes with everything obviously.

TIP# If you have more bananas, double the quantities and make an extra loaf. You can enjoy one of the banana breads now and then freeze the other for another day.

    Oh I love a banana bread. Will have to give this a go. But I actually prefer bananas on the over ripe side so it’s not often I have any left over 🙂
