Rainbow coloured caramely goodness with extra frosting. Whether it’s your Birthday or not, if you have a sweet tooth I know you’ll enjoy these indulgent Birthday Cake Blondies! 

A little over a week ago this black furry bundle of joy entered our lives. Yes, I’m pleased to announce that there’s a new cat about townhouse and his name is Arlo.

We adopted 2-year-old Arlo from the RSPCA and despite having a rough start to life, he is confident, sweet and charming in equal measures. Not to mention that fact that he looks like a mini panther!

I’m sure by now you’re thinking, that’s great crazy cat lady, but what the heck has this got to do with those delicious Birthday Cake Blondies you mentioned? Well I’m getting to that, I promise.

I was explaining to my son that Arlo’s previous owners had not treated him very nicely and his response was ‘Does that mean he’s never even had a birthday party?’ accompanied by the sad, wide-eyed look of devastation, that every parent is familiar with. ‘Mummy, pleeeeease let’s throw him a birthday party’ more eyelash fluttering and wobbly bottom lip. How could I say no?

I love 4-year-old logic. He never even considered the fact that we haven’t actually thrown a birthday party for our other cat and she’s 9. Does that make me a bad cat Mum?

Bad cat Mum or not, that was the reason I dreamt up these Birthday Cake Blondies in the first place. They are inspired by a cat’s (fake) birthday party, so make of that what you will.

And no, Arlo did not eat any and my son blew out the candle on his behalf. However, he was absolutely delighted with his birthday gift of giant cat tree.

Birthday Cake Blondies Recipe

Ingredients

Cake

  • 100g butter (lightly salted)
  • 130g plain flour
  • 200g soft light brown sugar
  • 1 large egg
  • 2 tsp vanilla extract
  • 3 tsp white chocolate chips
  • 3 tsp rainbow sprinkles

Icing

  • 75g softened butter
  • 225g icing sugar, sifted
  • 90g tub full-fat cream cheese
  • 1 tsp vanilla extract

Method

1# Pre-heat oven to 180 degrees C and add foil to the inside of an 8×8 baking tin.

2# Melt the butter over a low heat. Add in the sugar and stir thoroughly. Once combined, add the egg and vanilla extract. When the batter is thoroughly mixed add the flour and stir some more. Finally, scatter in the chocolate chips and the rainbow confetti sprinkles.

3# Transfer the mixture in to the baking tin and spread in evenly. Bake for around 25-30 minutes. Check mixture by inserting a knife in to the middle. If it comes out mostly clean, you’re good to go. Leave to cool.

4# To make the icing, sift the icing sugar in to a bowl. Add the butter and beat together. Finally, add the cream cheese and mix until you have a light fluffy icing.

5# Once the Blondies have cooled spread a layer of icing over the top and then cut into small squares. Add a few sprinkles to make it look pretty. Yum!

To make a regular version, just cut out the sprinkles and icing. They are just as tasty, just a little less pretty.
